We are currently in the middle of moving into our new house. This house was not a “move in ready” house, so we have been working sun up till sun down ripping up carpet, tearing down walls, painting, laying hardwood, and all that good stuff! I didn’t realize how much I would enjoy renovating a house. (My husband and I have actually talked about how fun it would be to start our own business flipping houses!) …. but that would be way in the future.
Things have been going pretty well, but our oven stopped working the other day. We had to wait for someone to come out to fix it. In the mean time, I found our crock pot in a box in the garage and whipped up an easy, healthy, and yummy dinner for us!
3 Boneless, Skinless Chicken Breasts
1 Jar of Salsa
1 Can Reduced Sodium Black Beans (rinsed & drained)
1 Can Corn (drained)
Mix together in the crock pot. Cook on high for 3-4 hours or on low 4-6 hours. Enjoy 🙂
