Turkey Meatloaf Muffins

These turkey meatloaf muffins are the perfect healthy and filling snack. I got the recipe from Jamie Eason on bodybuilding.com. (This is the recipe cut in half).

  • 1 pound ground turkey
  • 2 egg whites
  • 1/2 cup oats
  • 1/4 tsp thyme
  • 1 tbsp mustard
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 1 tbsp garlic powder
  • 1/2 small onion chopped

Preheat the oven to 375. Spray a muffin pan. Mix all ingredients together in a large bowl. Roll mixture into balls about the size of a racket ball and place in pan. Bake for 40 minutes. This makes about 8 muffins. 2-4 muffins is a good serving size for an afternoon snack!
