Lean 2 Bean Turkey Chili

I’ve been trying to find healthier versions of things lately, and boy was this good!! It was a lean 2 bean turkey chili. (I wish I could remember where I found it so I can credit the source!) But here is what you need to make it:

  • 1 1/2 lbs ground turkey                                                    
  • 1 medium zucchini
  • 1/2 yellow onion
  • 1 can black beans rinsed, drained
  • 1 can kidney beans rinsed, drained
  • 1 jar salsa
  • 1 medium bell pepper
  • 1 tbsp garlic
  • 1 tbsp cumin
  • 1/2 tbsp chili powder
  • 2 tsp oregano
  • low sodium chicken broth as needed

To be honest, I don’t measure anything… I just sprinkle until I think it’s enough!
Saute the onion, bell pepper, garlic, and zucchini. Cook ground turkey and drain. Then, add everything together and simmer for about 20 minutes! It makes a lot, so you can have leftovers for the week as well!
