I wanted to share another new recipe with ya’ll. BBQ salmon, sweet potatoes, and parmesan zucchini! I literally just put BBQ sauce on the salmon when I cooked it, and it actually turned out very good. Basically made mashed potatoes with the sweet potatoes (without using a bunch of butter and salt)! And the best part of this dish…. the parmesan zucchini 🙂 I dipped zucchini in olive oil and then into a low-fat parmesan, garlic, and black pepper mix. Sprayed a baking sheet and cooked them at 450 for about 25-30 minutes! I could have eaten the whole baking sheet of zucchini, but had to stop myself!!
