I thawed out some chicken while I was at work yesterday but didn’t really know what I was going to make with it. It gets boring eating the same ole grilled chicken a lot. I decided to try something new and throw it in the crock pot with a can of rotel and some salsa. I let it cook on high for about 3 hours, until it was no longer pink and started to shred. I served mine over some spinach. Jerrub put his in a tortilla shell and made a wrap. You can add some low fat sour cream… or a great alternative, plain Greek yogurt on top! It was delicious! Eating healthy doesn’t always have to be boring!! Don’t be scared to try new things.
