Good Morning 🙂 Just wanted to share my devotional and a yummy new breakfast recipe with you!
Therefore, since we are surrounded by such a great cloud of witnesses,
let us throw off everything that hinders and the sin that so easily entangles,
and let us run with perseverance the race marked out for us.
(I’ll summarize this for you)
“You might think cross country might be a boring sport to watch…. but really you never know what might happen in such a short race. All the runners start out at the starting line, ready, full of hope…and then they are off. Anything can happen on the course- navigating the curves, the hills, coping with the heat, taking a punch in the stomach…and stopping to help a fallen runner.
Kind of like life.
We all start at the starting line. We are full of hope and dreams…and then the race starts. And now we begin navigating the curves of life, the heat, the challenges, the losses, the heartbreak…and the occasional punch in the stomach. As each of us are running toward our finish line, we realize that life is not a pain-free, risk-free ride.
Stay on course. Don’t let the challenges cause you to quit the race that God has trusted you to run!!”
And now for the yummy new protein filled breakfast! I simply mixed a couple eggs, and lots of egg whites, spinach and green bell pepper (which Jerrub hates both, but LOVED these), chopped up cook chicken, and some pepper. Sprayed a muffin pan. Cooked some turkey bacon and wrapped it around. Then poured the mixture in. Baked at 350 for about 30-35 minutes! You’ll notice there is only bacon around a couple of them because I thought it was chewy, but Jerrub thought it gave it some crunch… Who knows?! Maybe using real bacon would make a difference! But these are awesome to make ahead and heat up throughout the week for a quick breakfast! I put salsa on top of mine which makes it even better!
