Even though Jerrub laughs at me because more than half of my plans never actually follow through, I’m still a big planner. Something that I have been doing recently that is super helpful is planning out my meals two weeks in advance. It only takes about 30 minutes to do and I get about 10 meals out of it. I sit down the day before I know I need to go grocery shopping and flip through different cookbooks I have and look on pinterest at some meals I’ve pinned. I have hundreds and hundreds of meals to choose from, so I just chose about 10 that look appealing to me at that time. I write down all the ingredients I’ll need for each meal on my grocery list and then make another list of all the names of the meals that I can refer back to through the following two weeks. I also put a little note next to the meal if it has an ingredient that may go bad quickly, so that I know to cook that meal sooner than later. Its nice to have different options throughout the week and already have all the ingredients on hand. And the ten meals really stretches out over 2 weeks because of left overs or the “I don’t feel like cooking tonight” days.
A dish that I’ve made twice now that we both LOVE and is super easy is Crockpot BBQ Chicken!
1 bottle bbq sauce
1/4 cup vinegar
1 tsp red pepper flakes
1/4 cup brown sugar
1/2-1 tsp garlic powder
4-6 chicken breasts
Throw it all in a crockpot and cook on low for 4-6 hours. I even put my chicken in frozen and it works perfect 🙂
