So, I never really used to know how to cook. Heck, I never even knew how much a cup was or how to read a recipe, and never had any intentions or interest in learning. I’ll never forget when I first started dating Jerrub and I went to his parent’s house. His mom said, “Okay Kellye, I’m about to start supper. Come help me.” It wasn’t even a question and I was nervous as could be. But at that point, you had to do whatever was needed to impress the parents… right?!?! I warned her that I had no idea what I was doing, but she didn’t care. Any girl that thought about being a part of her son’s life was gonna be able to feed him well. Every time we went over there after that, I never hesitated to help out in the kitchen, cause she wasn’t kidding about keeping her boy fed! Today, I am pretty proud to admit that I have become quite the Better Crocker. Not only have I become comfortable cooking and trying new things, but I actually really enjoy it. And all my thanks goes to my MIL (mother-in-law…. thats what I call her :)) If it wasn’t for her, I’d still be eating fast food and microwavable meals. So, I thought I would start sharing some of my recipes on here with ya’ll! I’ll start with one I tried this weekend that we both really enjoyed.. even as left overs!!
Chicken Bacon Ranch Pizza
1 ball pizza dough
2 chicken breasts, cooked and chopped into little chunks
Bacon, cooked and crumbled
Garlic Oil (or garlic and olive oil)
Shredded mozarella cheese
Season chicken with salt, pepper, and garlic and cook in skillet until done. Put dough on greased pizza pan and pre bake crust for about 5-7 minutes. Brush entire dough with garlic oil and sprinkle cheese. Then spread the chopped chicken and bacon. Cook at 400 degrees for about 15-20 minutes. With about 5 minutes remaining, add Ranch dressing and return to oven.
